品飲筆記：用文字捕捉嗅覺與味覺

舌頭在嘗味的過程中，原來亦會對飲料所產生相關的感受，甚至是在我們的記憶中，留下「可召回的痕跡」。現在也有人提倡將品飲筆記畫下來，更直觀的表現出味道的衝擊。

比較常聽見的，是專業侍酒師（sommelier）在品飲時做的記錄，將葡萄酒的單寧、口感、香氣、風味付諸筆尖，寫成一篇品飲筆記（Tasting Note）。

想要精確捕捉形容嗅覺與味覺的文字，也可以參考咖啡風味輪上的文字去比對舌上的感覺，也可以購買酒香瓶（或稱酒鼻子）來比對，一個一個小瓶子，彷彿是提煉出的回憶，一字排開，像是氣味圖書館，等待你翻閱和品嚐內含的詩意與意趣。

This programme is designed to introduce students to essential and brand neutral whisky knowledge. It enables students to gain knowledge of the world of whisky by learning the history, production, categories, styles of whisky and the art of tasting and appreciating whisky. Principal whisky production countries and regions around the world will be introduced along with whisky tasting, so that students could be equipped with valuable sensory skills to unlock the flavour secrets within whisky from each region.
