品飲筆記 :用文字捕捉嗅覺與味覺

舌頭在嘗味的過程中,原來亦會對飲料所產生相關的感受,甚至是在我們的記憶中,留下「可召回的痕跡」。現在也有人提倡將品飲筆記畫下來,更直觀的表現出味道的衝擊。
比較常聽見的,是專業侍酒師(sommelier)在品飲時做的記錄,將葡萄酒的單寧、口感、香氣、風味付諸筆尖,寫成一篇品飲筆記(Tasting Note)。
想要精確捕捉形容嗅覺與味覺的文字,也可以參考咖啡風味輪上的文字去比對舌上的感覺,也可以購買酒香瓶(或稱酒鼻子)來比對,一個一個小瓶子,彷彿是提煉出的回憶,一字排開,像是氣味圖書館,等待你翻閱和品嚐內含的詩意與意趣。
